Jalapeno Poppers

This is one of my favorite recipes. The ingredient list is short and there aren't a ton of steps which makes it nice as a throw together snack. I don't really have ingredient amounts because I never really measure but usually 6-8 jalapenos, a pack of cream cheese, and a pound of bacon is about right. If you have leftovers of the bacon or cream cheese I assume you will be able to come up with a way to eat them.

Ingredients

  • Jalapenos
  • Cream cheese
  • Bacon
Directions
  1. Cut jalapenos in half lengthwise and remove the seeds/stem. A spoon works well for this and you'll need it for the next step anyway.
  2. Fill empty jalapeno halves with cream cheese. I usually just fill the empty cavity with the spoon and then smooth it over with the back of the spoon until its level with the sides of the jalapeno.
  3. Wrap each jalapeno in bacon. Depending on the size of your jalapenos you could go with a whole or half slice of bacon per jalapeno half. You just don't want to overlap too much so that the bacon gets a little crispy. You can secure the bacon with toothpicks but honestly I just try and make sure the bacon is tucked under the jalapeno and don't worry about it.
  4. Place the jalapenos and a baking sheet and bake at 425 for ~20-25 minutes or until bacon is how you want it. Use convection if you have it.
