"Cauliflower" rice
This isn't really even a recipe but its how we make rice at home. First we use Uncle Ben's converted rice. It cooks quicker and has more resistant starch than regular rice (This probably doesn't mean much, but its nice that it cooks quickly). If you use a different type of rice I am not sure how this would work, but it might be fine.
We like this rice because its an easy way to sneak an extra vegetable into a dinner and there really isn't a huge difference in taste/texture. I don't even add salt to it as usually the dish we serve it on is plenty salty. You could probably add some fat to it if you wanted like butter or coconut oil, I might try that next time. This is also for 2 servings. If you need to scale it up you need to be careful with the amount of water. You can checkout the article here, but basically the ratio for rice is 1:1 rice to water plus whatever you need for evaporation. So if you double the recipe I would probably add 3/4 cup water instead of 1 cup, but you will need to play with the amounts.

Ingredients
- 1/4 cup converted rice
- 6 oz frozen cauliflower rice
Directions
- Add rice, 1/2 cup water, and cauliflower rice to a small saucepan
- Bring the water to a boil over medium high, turn to low and cover.
- Simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes covered (Don't open the lid after it finishes cooking).
- Fluff with a fork and serve.
