Spaghetti squash

Again this is not really a recipe but it is really good and a good way to eat "pasta" if you are trying to eat more vegetables and less processed foods. 1 squash is usually enough for 2-3 people depending on the size. Once we have fluffed and removed the inside of the squash we just top with whatever pasta sauce (and meatballs usually) that we have.

Ingredients:

  • 1 spaghetti squash
  • Olive oil
  • Salt and Pepper
Directions:
  1. Cut the spaghetti squash in half lengthwise.
  2. Scoop out the seeds from the middle.
  3. Drizzle generously with olive oil
  4. Sprinkle salt and pepper on top.
  5. Place cut side down on a baking sheet
  6. Bake for 45 minutes or until a knife inserted into the squash goes in and comes out easily.
  7. Fluff the interior of the squash with a fork going all the way down to the skin. Do not eat the skin.
