Spaghetti squash
Again this is not really a recipe but it is really good and a good way to eat "pasta" if you are trying to eat more vegetables and less processed foods. 1 squash is usually enough for 2-3 people depending on the size. Once we have fluffed and removed the inside of the squash we just top with whatever pasta sauce (and meatballs usually) that we have.

- 1 spaghetti squash
- Olive oil
- Salt and Pepper
Directions:
- Cut the spaghetti squash in half lengthwise.
- Scoop out the seeds from the middle.
- Drizzle generously with olive oil
- Sprinkle salt and pepper on top.
- Place cut side down on a baking sheet
- Bake for 45 minutes or until a knife inserted into the squash goes in and comes out easily.
- Fluff the interior of the squash with a fork going all the way down to the skin. Do not eat the skin.
