Sweet Potato (or any other vegetable) Puree
A great side that is easy and delicious, but does require an immersion blender (something like https://www.amazon.com/Braun-MQ505-Multiquick-Blender-Black/dp/B01EA5ZI2U).
You just dump everything in a pot, cook it until super tender and falling apart and then blend. You can peel the potatoes if you want to but I just wash them and blend them with the skins. Skins blend right in and add fiber.

I also do this with carrots, cauliflower and broccoli and they are all delicious. You just need to watch out with the water so err on the side of too little and add it during the cooking if needed.

- 3 medium or 2 large sweet potatoes
- 4-6 tbsp butter depending on how rich you want it to be.
- 4-6 tbsp water depending on how loose you want it to be (You can always add more water at the end so I usually only add 4 tbsp and then thin if needed)
- Salt to taste
- 1 tsp Vinegar or lemon juice (optional)
Directions
- Rinse and dice the sweet potato into a small rough dice. No need to be perfect here since we are going to blend it.
- Add sweet potato, butter, and water to a sauce pan and heat over medium high.
- Once water is simmering and steaming, cover and reduce heat to low.
- Simmer for 20 minutes or until very tender.
- Blend with the stick blender adding water if needed to thin the mixture out.
- Add salt and vinegar or lemon juice to taste
