Stick Blender Mayo
Making mayo with a stick blender is really easy. You can find recipes like https://www.seriouseats.com/recipes/2011/10/two-minute-mayonnaise.html and https://www.allrecipes.com/recipe/237828/chef-johns-homemade-mayonnaise/ which promise that you just put everything in a jar and blend it and "it just works". The problem with these is that sometimes it doesn't just work or you need a really specific cup to make it work. And on top of that there is really no need to go through all of that and risk having your emulsion break.
You can do the same thing and have the ease of the stick blender but with almost no risk of the emulsion breaking by just slowly adding the oil while running the blender. I don't even measure the oil. I just stream it in a little bit at a time until the emulsion starts and the mixture starts to turn white. Then you can add a bit more at a time until its as thick as you want it to be. If I am making it for a blue cheese dressing (basically just add blue cheese until it tastes like you want) I will thin it out a little bit with water.
Also this is just a base recipe. You can add whatever flavorings you want. Like throw a minced garlic clove in, add a bunch a basil, or blue cheese.

Ingredients:
- 1 whole egg
- 1 tablespoon lemon juice
- 1 teaspoon dijon mustard
- 1 cup neutral oil (like avocado oil, canola oil, etc.)
- Salt to taste
Directions:
- Add the egg, lemon juice, and mustard to the cup that came with your stick blender
- Blend for a second or two and then begin to slowly drizzle in oil while continuing to blend
- Continue adding oil until the mayo is as thick as you like
- If you want the mayo to be thinner just add a little water and blend it in
- Add salt to taste
