Bacon Eggs



This makes enough eggs for 4 people. I use a 12 inch skillet on a small 8 inch burner. This allows the middle of the pan to get really hot and cook the eggs quickly, but the edges of the pan are cool so that the cooked eggs can move to the edges of the pan and not overcook. Ingredients:
  • 10 eggs
  • 2 tablespoons bacon fat
  • 3 tablespoons butter
  • 2 tablespoons sour cream
  • Salt and pepper
Directions:
  1. Add bacon fat and butter to pan set over medium heat
  2. Whisk eggs in a bowl until combined.
  3. Add eggs to now warm skillet and turn to medium high
  4. Stir constantly until eggs are mostly set, turn heat down to medium low
  5. Once eggs are almost done, turn off heat and stir in 2 tablespoons of sour cream
  6. Season with salt and pepper.
