Butter eggs


This is a follow up to my bacon eggs which shows a more reasonable ratio of fat to eggs and how to make this as a single serving instead of family size. I am using an 8 inch carbon steel pan, but a non stick would also work well. Definitely check out the video to see the entire process as it moves pretty quickly.


Ingredients:
  • 3 eggs
  • 2 tablespoons butter
  • 1 tablespoon sour cream
  • Salt and pepper
Directions:
  1. Set non stick pan over medium high heat
  2. Whisk eggs in a bowl until combined.
  3. Add butter in 4 chunks to bowl with eggs
  4. Add egg/butter mixture to skillet and stir constantly
  5. Stir constantly until eggs are starting to set and remove from while while continuing to stir
  6. Repeat moving on/off the heat until eggs are to desired consistency
  7. Once eggs are done, turn off heat and stir in source cream
  8. Season with salt and pepper.
