Taco night
This is taco night at our house. Salads for the adults and hard shell tacos for the kids (and sometimes adults). I also do a 1 to 1 ratio between lbs of ground beef and black beans since my daughter prefers the beans, plus getting a little more fiber into the meal. Also this is for ~10 servings which will last us 3 nights with a little bit leftover to use for some Queso. Its a lot of ingredients but most of them we just always have on hand so its not too big of a deal but it can take some time to assemble the perfect plate.
Ingredients:
- 3 lbs 80/20 ground beef
- 3 cans black beans
- 9 tbsp Chili powder
- 4 1/2 tbsp cumin
- 1 1/2 tbsp coriander
- 1 1/2 tsp oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- salt to taste
- 2 5 oz bags of baby spinach
- 1 pint of cherry tomatoes
- 12 oz cheddar cheese
- 3 avocados
- Sour cream
- Hard shell tacos
- 1 bunch of cilantro
- Hot sauce of choice
- Pickled jalapenos
- Trader joe's cheese bites
- Salsa of choice
Directions:
- Brown the ground beef in a pan large enough to fit the beef and beans
- Once browned, add the spices and cook for 1 minute
- Add the beans and a splash of water and cook until the mixture is "dry" and there is very little liquid left in the pan
- Assemble your salad starting with the greens, the meat, and the cheese on top of the hot meat so it starts to melt
- Add other ingredients to taste
