Carrot (or parsnip) "fries"

 You can cut the carrots into whatever size/shape you want, but I usually just cut a large carrot in thirds and then cut them in half, quarters, sixths, etc. depending on size.

Ingredients:

  • Carrots
  • Olive oil
  • Salt and pepper
Directions:
  1. Cut carrots in to a fry shape.
  2. Cover with olive oil, salt, and pepper.
  3. Bake at 425 F (preferably with convection) for 25 - 30 minutes or as crispy as you want them.
