Roast chicken

"Done" for me is right around when the breast is 155 F and the thigh is usually around 165 F.

Ingredients:

  • 1 3-4 lb chicken
  • olive oil or butter
  • salt and pepper
Directions:
  1. Drizzle chicken with oil or cover with butter
  2. Season with salt and pepper inside and out
  3. Bake in a 425 F oven (with convection if you have it) for 1 hour or until "done"
