Creamed Succotash
Super simple creamed succotash recipe for Thanksgiving. I just made extra onions/celery for the stuffing and used that in this recipe so it was really just throwing everything in a pot and heating it up.
Ingredients:
- 4 tablespoons butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 4 oz cream cheese
- 1/3 cup heavy cream
- 1 bag of frozen corn
- 1 bag frozen lima beans
- Salt and pepper to taste
Directions:
- Melt the butter and cook the onion until soft
- Add garlic and cook for 30 seconds
- Add cream cheese, heavy cream, corn, and lima beans and simmer until "done"
- Season with salt and pepper
