Creamed Succotash

Super simple creamed succotash recipe for Thanksgiving. I just made extra onions/celery for the stuffing and used that in this recipe so it was really just throwing everything in a pot and heating it up.

Ingredients:

  • 4 tablespoons butter
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 4 oz cream cheese
  • 1/3 cup heavy cream
  • 1 bag of frozen corn
  • 1 bag frozen lima beans
  • Salt and pepper to taste

Directions:
  1. Melt the butter and cook the onion until soft
  2. Add garlic and cook for 30 seconds
  3. Add cream cheese, heavy cream, corn, and lima beans and simmer until "done"
  4. Season with salt and pepper
