Pizza


 

Here I am going to share my thoughts on making pizza at home. The dough is based on ATK's pizza dough recipe.

The dough:

Ingredients:

  • 468 grams bread flour
  • 1/2 teaspoon instant yeast
  • 326 grams of cold water (70% hydration)
  • 10 grams of salt
  • 1 tablespoon olive oil
Directions:
  1. Combine flour, and yeast in food processor
  2. With machine running add water and run for 10 seconds
  3. Allow to rest for 10 minutes
  4. Add oil and salt and process for 60 seconds
  5. Refrigerate for 1-3 days
The sauce:

Ingredients:
  • 1 28 oz can crushed tomatoes
  • 4 tbsp olive oil
  • 3 cloves of garlic
  • Salt to taste
Directions:
  1. In a mortar and pestle crush the garlic with a pinch of salt
  2. Once in a fine paste slowly add olive oil and emulsify
  3. Add to crushed tomatoes and season to taste
The cheese:

Ingredients:
  • Fresh whole milk mozzarella
  • Low moisture whole milk mozzarella
  • Super sharp provolone or aged gouda
Cooking the pizza:
  1. Preheat stone or steel on top rack in hottest oven that you have for 30 minutes
  2. Form dough into a circle and top with sauce, mozzarella, and any other toppings
  3. Bake until cheese melts and crust is charred
  4. Immediately us a microplane to "dust" entire pizza with provolone or gouda (Put on twice as much as you think you should).
