Pizza
Here I am going to share my thoughts on making pizza at home. The dough is based on ATK's pizza dough recipe.
The dough:
Ingredients:
- 468 grams bread flour
- 1/2 teaspoon instant yeast
- 326 grams of cold water (70% hydration)
- 10 grams of salt
- 1 tablespoon olive oil
Directions:
- Combine flour, and yeast in food processor
- With machine running add water and run for 10 seconds
- Allow to rest for 10 minutes
- Add oil and salt and process for 60 seconds
- Refrigerate for 1-3 days
The sauce:
Ingredients:
- 1 28 oz can crushed tomatoes
- 4 tbsp olive oil
- 3 cloves of garlic
- Salt to taste
Directions:
- In a mortar and pestle crush the garlic with a pinch of salt
- Once in a fine paste slowly add olive oil and emulsify
- Add to crushed tomatoes and season to taste
The cheese:
Ingredients:
- Fresh whole milk mozzarella
- Low moisture whole milk mozzarella
- Super sharp provolone or aged gouda
Cooking the pizza:
- Preheat stone or steel on top rack in hottest oven that you have for 30 minutes
- Form dough into a circle and top with sauce, mozzarella, and any other toppings
- Bake until cheese melts and crust is charred
- Immediately us a microplane to "dust" entire pizza with provolone or gouda (Put on twice as much as you think you should).
