Citrus Braised Pork
This is adapted from an ATK recipe of the same name.
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground allspice
- 1/2 tsp ground cinnamon
- 6 tbsp tomato paste
- 1 1/2 cups water
- 2 oranges, juiced
- 3 tbsp distilled white vinegar
- 1 1/2 tbsp Worcestershire sauce
- 5 bay leaves
- Salt and Pepper
- 4 lb boneless pork shoulder roast, cut into 1 inch chunks
Directions:
- Saute onion in olive until until translucent
- Add spices and garlic and cook for 30 seconds
- Add tomato paste and cook another 30-60 seconds
- Add water, orange juice, 2 tbsp vinegar, Worcestershire sauce, bay leaves, 2 tsp salt, 1/2 tsp pepper, and pork.
- Bring to a boil and then move to a 300F oven for 2 hours
- Once pork is fork tender, move to the stove top and simmer to reduce liquid while mashing with a potato masher until pork is shredded
- Add remaining vinegar and taste for seasoning
