Citrus Braised Pork

 This is adapted from an ATK recipe of the same name.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 6 tbsp tomato paste
  • 1 1/2 cups water
  • 2 oranges, juiced
  • 3 tbsp distilled white vinegar
  • 1 1/2 tbsp Worcestershire sauce
  • 5 bay leaves
  • Salt and Pepper
  • 4 lb boneless pork shoulder roast, cut into 1 inch chunks
Directions:
  1. Saute onion in olive until until translucent
  2. Add spices and garlic and cook for 30 seconds
  3. Add tomato paste and cook another 30-60 seconds
  4. Add water, orange juice, 2 tbsp vinegar, Worcestershire sauce, bay leaves, 2 tsp salt, 1/2 tsp pepper, and pork.
  5. Bring to a boil and then move to a 300F oven for 2 hours
  6. Once pork is fork tender, move to the stove top and simmer to reduce liquid while mashing with a potato masher until pork is shredded
  7. Add remaining vinegar and taste for seasoning
