Pizza For A Crowd
Dough
Got recipe from https://www.seriouseats.com/basic-new-york-style-pizza-dough but skip the sugar
Ingredients:
630g bread flour, plus more for dusting
- 10g kosher salt
- 10g instant yeast, such as SAF Instant Yeast
- 32g extra virgin olive oil
- 420g water
Directions:
- Combine dry ingredients in food processor. I like to combine them in a bowl on the scale and then move them to the food processor. Use will use the bowl later to let the dough rise anyway.
- Combine water and olive oil in microwave safe dish. I use a Pyrex measuring cup. Microwave on high until it reaches 110 degrees about 90 seconds.
- Pulse dry ingredients 4 times until combined. Then while running slowly add the water and olive oil mixture. I like to use a butter knife at the tip of the measuring cup so it pours easily down the knife and into he food processor. Run processor for 30 seconds after water is added.
- Knead dough on lightly floured surface for 30 seconds and shape into a ball. Put in bowl and lightly coat with olive oil.
- Let rise at room temp for 90 minutes or until doubled or let rise in the fridge for 1 - 5 days.
- When ready to bake put a baking steel on the bottom rack and preheat oven to the highest it will go, ideally 550 for 30 minutes.
- Shape dough to 14 inch circle and using a peel slide onto the pizza steel keeping round shape. Bake for 150 to 180 seconds until bottom has a nice color. Pop any bubbles that appear while baking.
- Refrigerate or freeze par baked dough until needed. Let rise to room temp for at least an hour before using.
Pizza Sauce
Ingredients:
- 1 28oz can crushed tomatoes
- 3 garlic cloves
- 3 tbsp olive oil
- 1.5 tsp diamond crystal kosher salt
Directions:
- Combine garlic and salt on mortar and pestle. Grind garlic into a paste.
- Slowly add olive oil to emulsify garlic and olive oil.This doesn't need to be perfect but help distribute everything in the crushed tomatoes.
- Once garlic and olive oil are combined, add to crushed tomatoes. Refrigerate until needed.
Final assembly
- Preheat the oven to 550 for at least 30 minutes again but this time put the steel on the second from the top rack.
- Assemble pizza on the peel. Turn oven to broil and allow to broil for 60 seconds. Slide pizza on steel and bake for 150 to 180 seconds
- Remove from the pizza from oven and let cool before cutting. Turn oven bake to 550 until ready to bake next pizza.
