Sheet Pan Sausages
Ingredients: 2 tbsp olive oil 2 medium onions 3 bell peppers Sausage seasoning to taste 4 lbs Italian sausage, any mixture of sweet and hot Salad greens Directions: Cut ends off of onions, peel skin, and slice pole to pole. Remove stem and seeds from pepper, slice into strips. Place peppers and onions on a sheet pan with olive oil, salt, and a light dusting of sausage seasoning Broil under high heat for 8 minutes or until tips start to blacken Mix peppers and onions and broil again for 4 minutes Meanwhile cut slits across the sausages (I like to do 2 slits for sweet and 3 for hot so its easy to tell them apart) Top peppers and onions with sausages and broil 5 minutes or until browned Flip and broil another 5 minutes until browned Turn off broiler and leave on middle rack of oven until sausages hit 155+ degrees Remove pan from oven, tent with foil, and let rest 10 minutes.
