Queso
I use this recipe whenever we make tacos and just make sure to make a little extra taco meat. You really can use up whatever leftovers you have though. I have made this with leftover carnitas and it was also very good. I have even put some leftover roasted peppers and onions in that I chopped into a small dice.
For the serano peppers, I like to grate them on a microplane to add flavor and heat. You can obviously use whatever peppers you want or none at all.
- 1 package cream cheese
- Milk/Cream to desired thickness
- 4 ounces cheddar, grated
- 4 ounces Monterey jack, grated
- Salsa
- Pickled jalapenos
- 2 seranos (to taste)
- Leftover taco meat
- salt to taste
Directions:
- Place cream cheese in a saucepan
- Add a splash of milk/cream and cook over medium low until "melted"
- Gradually add cheddar and Monterey jack stirring as needed
- Add salsa, pickled jalapenos, and serano peppers to taste
- Add leftover taco meat
- Taste and adjust salt as needed. Depends on how much salt you had in your taco meat
- Adjust consistency with more milk/cream if needed
