Giant chicken nugget

If all you can find is ground chicken breast then up the cream to 1/2 a cup so that the loaf doesn't dry out. This is also a very basic recipe and the taste is very neutral which the kids seem to like. I would probably make a buffalo version if it were just for me. Just sub in blue cheese instead of the pecorino romano, splash in some Frank's red hot, plus extra cayenne pepper.

Ingredients:

  • 1 tbsp butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 lbs ground chicken 8% fat
  • 1/2 cup almond flour
  • 1/4 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup pecorino romano
  • 2 eggs

Directions:
  1. Cook the onion in butter until translucent (6 minutes)
  2. Add garlic and cook for 30 seconds, set aside
  3. Add everything to a bowl including cooled onion mixture and mix with hands
  4. Put in a loaf pan and bake at 375F for 45 minutes
  5. Allow to rest for 10 minutes before slicing
