Pressure cooker shredded beef

 Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 2 tbsp tomato paste
  • 12 ounces of beer
  • 1/2 cup apple cider vinegar
  • 3 bay leaves
  • Salt and Pepper
  • 4 lb chuck roast, cut into 1 inch chunks
Directions:
  1. Saute onion in olive until until translucent
  2. Add spices and garlic and cook for 30 seconds
  3. Add tomato paste and cook another 30-60 seconds
  4. Add beer, vinegar, bay leaves, 2 tsp salt, 1/2 tsp pepper, and beef.
  5. Cook under pressure for 30 minutes
  6. Once beef is fork tender, move to the stove top and simmer to reduce liquid while mashing with a potato masher until beef is shredded
  7. Taste for seasoning and adjust
