Pressure cooker shredded beef
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 2 tbsp tomato paste
- 12 ounces of beer
- 1/2 cup apple cider vinegar
- 3 bay leaves
- Salt and Pepper
- 4 lb chuck roast, cut into 1 inch chunks
Directions:
- Saute onion in olive until until translucent
- Add spices and garlic and cook for 30 seconds
- Add tomato paste and cook another 30-60 seconds
- Add beer, vinegar, bay leaves, 2 tsp salt, 1/2 tsp pepper, and beef.
- Cook under pressure for 30 minutes
- Once beef is fork tender, move to the stove top and simmer to reduce liquid while mashing with a potato masher until beef is shredded
- Taste for seasoning and adjust
